Ingredients
  

  • 2 cups shredded cooked chicken
  • 6 slices crispy bacon (chopped)
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • 3 tbsp cream cheese
  • 2 tbsp ranch seasoning
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • salt and pepper to taste
  • For the Keto “Taquito Shell”
  • Instead of tortillas, we use melted cheese.
  • 1 ½ cups shredded mozzarella
  • ½ cup shredded cheddar

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Mix shredded chicken, bacon, cream cheese, ranch seasoning, mozzarella, cheddar, garlic powder, onion powder, salt, and pepper in a bowl.
  3. Line a baking sheet with parchment paper.
  4. Place small piles of shredded cheese on the sheet and bake for 5–6 minutes until melted.
  5. Let cheese cool for 30 seconds.
  6. Add a spoonful of chicken filling on each cheese circle.
  7. Roll carefully into a taquito shape.
  8. Place seam side down on the tray.
  9. Bake again for 5–7 minutes until crispy.
