Ingredients

  • 2 cups cooked shredded chicken breast
  • 2 cups shredded green cabbage
  • 1 cup shredded purple cabbage
  • 1 cup julienned carrots
  • 1 red bell pepper (thinly sliced)
  • ½ cup chopped cilantro
  • ¼ cup chopped green onions
  • ⅓ cup roasted peanuts
  • 1 tablespoon sesame seeds (optional)
  • Ingredients for Peanut Dressing
  • Thai Peanut Dressing
  • 3 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 1 garlic clove minced
  • 2–3 tablespoons warm water (to thin)

Method
 

  1. Shred cabbage, carrots, and bell pepper and place in a large bowl.
  2. Add shredded cooked chicken.
  3. Whisk peanut butter, soy sauce, honey, lime juice, garlic, ginger, sesame oil, and water to make dressing.
  4. Pour dressing over salad and toss well.
  5. Sprinkle peanuts, sesame seeds, cilantro, and green onions on top.
  6. Serve immediately.
