Ingredients
  

  • 1 pound ground turkey
  • 1 tablespoon avocado oil or olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon fresh grated ginger (or ½ teaspoon ground ginger)
  • 1 (14–16 oz) bag coleslaw mix or shredded cabbage
  • 3 tablespoons soy sauce or coconut aminos
  • 1 teaspoon sesame oil
  • Salt and black pepper, to taste
  • 2 green onions, sliced

Method
 

  1. Heat oil in a large skillet over medium heat. Add ground turkey and cook, breaking it up as it browns. Season lightly with salt and pepper.
  2. Once the turkey is mostly cooked, add the chopped onion. Cook until softened, then stir in garlic and ginger. Cook for about 30 seconds until fragrant.
  3. Add the coleslaw mix to the pan. Stir well to combine. It will look like a lot at first, but it cooks down quickly.
  4. Pour in soy sauce (or coconut aminos) and drizzle in sesame oil. Stir and cook for 4–6 minutes, until cabbage is tender but still slightly crisp.
  5. Remove from heat and top with green onions and optional toppings. Serve hot.
