Ingredients
  

  • For the Salad:
  • 3 cups green cabbage, finely shredded
  • 1 cup cucumber, finely diced
  • 3 green onions, thinly sliced
  • 1 cup fresh spinach or arugula, roughly chopped
  • ½ cup edamame, cooked and shelled (optional)
  • ¼ cup fresh chives, chopped
  • ¼ cup sunflower seeds or hemp seeds
  • For the Green Goddess Dressing:
  • 1 ripe avocado
  • ½ cup plain Greek yogurt
  • 1 cup fresh basil leaves
  • ½ cup fresh parsley
  • ¼ cup fresh chives
  • 2 garlic cloves
  • Juice of 1 large lemon
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 2 tbsp water (to thin if needed)
  • Salt and pepper to taste

Method
 

  1. Finely shred cabbage and add to a large bowl.
  2. Add diced cucumber, sliced green onions, spinach, edamame, and chives.
  3. Blend avocado, yogurt, basil, parsley, chives, garlic, lemon juice, olive oil, and vinegar until smooth.
  4. Taste dressing and adjust seasoning — add water to thin if needed.
  5. Pour dressing generously over salad and toss thoroughly for 60 seconds.
  6. Top with sunflower seeds, fresh chives, and a drizzle of olive oil. Serve immediately or refrigerate.
