- Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and paprika. Sear for about 4–5 minutes per side until golden. Remove from skillet and set aside.
- In the same skillet, add garlic and cook for about 30 seconds until fragrant. Pour in chicken broth and scrape up any browned bits from the pan. This is where the flavor lives.
- Lower the heat. Stir in Greek yogurt (or coconut milk), Italian seasoning, and sun-dried tomatoes. Mix until smooth and gently simmer. Do not boil.
- Return chicken to the skillet. Spoon sauce over the top, cover, and simmer for 8–10 minutes until chicken is cooked through.
- Sprinkle with parmesan if using and fresh herbs. Serve warm.
