  • 2 medium sweet potatoes, peeled and cubed

  • 1 pound ground beef (85% or 90% lean works well)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon chili flakes (optional)
  • 1 cup cottage cheese (full-fat or low-fat)
  • 2 to 3 tablespoons hot honey, to taste
  • Fresh parsley or green onions, for garnish (optional)

Method
 

  1. Roast the sweet potatoes
  2. Preheat the oven to 400°F (200°C). Toss the cubed sweet potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer. Roast for 25 to 30 minutes, flipping halfway through, until tender inside and lightly caramelized on the edges.
  3. Cook the ground beef
  4. While the sweet potatoes are roasting, heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed. Season with garlic powder, smoked paprika, onion powder, chili flakes, salt, and pepper. Stir well and cook for another 2 to 3 minutes so the spices bloom.
  5. Prepare the cottage cheese
  6. Spoon the cottage cheese into a bowl and let it sit at room temperature for a few minutes. This helps it blend more smoothly into the warm ingredients.
  7. Assemble the bowls
  8. Divide the roasted sweet potatoes between two bowls. Top with the seasoned ground beef, then add a generous scoop of cottage cheese to each bowl.
  9. Finish with hot honey
  10. Drizzle hot honey over the top just before serving. Garnish with fresh parsley or green onions if desired.
