Ingredients
  

  • 2 cans (15 oz each) chickpeas, rinsed and drained
  • 1 English cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, finely diced
  • ½ cup Kalamata olives, halved
  • ¾ cup feta cheese, crumbled
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh mint, roughly torn
  • 3 tbsp olive oil
  • Juice of 1½ lemons
  • 1 tsp lemon zest
  • 1 tsp dried oregano
  • 1 garlic clove, minced
  • Salt and pepper to taste

Method
 

  1. Whisk olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper together in a small bowl.
  2. Dice cucumber, halve tomatoes, finely dice red onion, halve olives.
  3. Combine chickpeas, cucumber, tomatoes, red onion, olives, parsley, and mint in a large bowl.
  4. Pour dressing over everything and toss well until fully coated.
  5. Fold in crumbled feta gently.
  6. Let sit 15–20 minutes before serving. Taste and adjust seasoning.
